The Role

The Pastry Baker is the "Craftsman of the Morning." You are the first to arrive, responsible for the foundational doughs and breads that define our breakfast and sandwich programs. Your work is governed by the clock and the scale; you understand that proofing times, oven temperatures, and hydration levels are the variables that create perfection.

What You’ll Own

• Dough Production: Execute daily bakes of croissants, sourdoughs, brioche, and seasonal pastries to the Pastry Chef’s exact specifications.
• Oven Management: Master the timing and rotation of our deck and convection ovens to ensure every loaf and pastry has the perfect crumb and crust.
• Proofing & Fermentation: Monitor and manage the life of our starters and the proofing cycles of our doughs, adjusting for humidity and temperature as needed.
• Station Prep: Prepare fillings, glazes, and washes for the morning bake; ensure the bakery station is reset and clean for the next shift.
• Consistency: Ensure every muffin, scone, and loaf looks and tastes identical to the one before it, maintaining our high standard of "American Son" craft.

Who You Are

• 1+ year of professional baking experience, ideally in a high-volume or specialty bakery.
• A morning person who finds peace in the early hours and the rhythm of a bake.
• Highly disciplined with measurements and timing—you live by the gram.
• Physically capable of handling large bags of flour and standing for long shifts.
